對于維生素D，相信有孩子的爸爸媽媽一定不會陌生。維生素D是一種可溶性維生素，主要功能是促進小腸黏膜細胞對鈣和磷的吸收，維持血清鈣磷濃度的平衡，還能幫助強化骨骼。因此對于補鈣，無論你吃了多少鈣片，喝了多少牛奶，如果缺乏維生素d的參與，吃再多也是浪費，毫不夸張地說：如果鈣是骨骼必不可少的原料，那么維生素D就是守護這個原料倉庫的“守門人”，可見維生素D的重要性。

一般來說，在紫外線的照射下，我們的身體會自動合成維生素D，當然通過飲食也能適量地補充維生素D。然而富含維生素D的食物并不多，乳類，動物肝臟，蛋黃以及富含脂肪的海魚都含有一定的維生素D，而谷物，水果和蔬菜種幾乎都不含維生素D。今天給大家分享的美食就是一道富含維生素D的菌類蔬菜，這就是口蘑。

口蘑原本是生長在蒙古草原上的一種白色傘菌野生蘑菇，一般長在有羊糞或者羊骨的地方，因此味道異常鮮美。最早的時候，口蘑通常是由草原運往張家口市加工后再銷往內地，所以才有了“口蘑”的稱呼。口蘑由于產量不大，需求量卻很大，因此比較昂貴，目前還是市場上最貴的一種蘑菇。然而這種蔬菜中卻含有大量的維生素d，也是唯一富含維生素d的蔬菜，平時也并不多見，遇到了再貴都要買，口感鮮美，營養豐富，一定不能錯過。

口蘑菌肉肥厚，質地細膩，口感鮮美，清燉、紅燒、做湯均可。最簡單的做法就是用上好的蠔油紅燒，不需過多調料，最大程度保留口蘑的鮮嫩口感。

新鮮口蘑洗凈之后去蒂，切成厚片備用。口蘑切片不宜太薄，等下焯水紅燒都會收縮一部分。

鍋中加水燒開，將切好的口蘑下鍋焯水，焯水時間2分鐘左右。焯水之后撈出冷水沖涼，控干水分備用。

炒鍋中加入少許食用油，先加入蔥段、蒜片炒香之后，將焯水過的口蘑下鍋，大火快速翻炒1分鐘至口蘑變軟稍稍出水。

加入兩勺蠔油，翻炒均勻，蠔油中已經有一定的咸度，所以不需要再加食鹽，而且本身的鮮味和菌類的鮮香已經足夠了，也不必再多加調料，簡單一炒就好。
